Frisee is a low-histamine salad green with no known histamine-releasing or DAO-blocking properties.

Frisee (a curly, slightly bitter chicory-family green) is a fresh vegetable that doesn't contain notable histamine and has no established mechanisms that worsen histamine reactions.

  • Part of the chicory family — like escarole and endive, frisee belongs to a group of greens that are generally well-tolerated from a histamine perspective when eaten fresh

  • Use it fresh — frisee wilts quickly, and as with most leafy greens, freshness helps keep biogenic amine levels as low as possible

It's a nice textural addition to salads and works well paired with other low-histamine ingredients.
