If you are choosing dairy at the store, look for uncultured options rather than anything labeled 'live active cultures', 'probiotic', 'cultured', or 'fermented'. Keep dairy at the back of the fridge where it is coldest, buy tubs with plenty of date left, and do not leave yogurt sitting out at room temperature. Cooking or heating it will not lower the histamine that has already formed during fermentation, so warming it does not make it a safer choice.
