Butterhead lettuce

Low histamine

One of the gentlest salad greens for histamine sensitivity — fresh, unfermented, and naturally low in histamine.

Butterhead lettuce contains very little histamine and doesn't appear to trigger histamine release in the body.

  • Freshness matters — like most leafy greens, the histamine content stays low when it's fresh, but wilting or browning leaves are a sign to move on

  • Compared to other greens — butterhead tends to be better tolerated than spinach, which is widely listed as a concern in histamine intolerance across major sensitivity sources
