A dish built almost entirely from histamine-active vegetables — tomatoes and eggplant together make this a high-load meal for many sensitive people.

Ratatouille is a classic that, unfortunately, combines some of the most histamine-active vegetables together.

  • Tomatoes and eggplant — tomatoes are well-established histamine liberators; eggplant is commonly listed as a concern on sensitivity lists, though the evidence for its liberator status is less firmly established than for tomatoes; both are consistently flagged, and eating them together may compound the effect

  • Reheated leftovers — reheated portions tend to be higher in histamine than freshly made ones, so eating it fresh is generally the better option if you do try it
