Moderate histamine

Lentils contain moderate levels of naturally occurring amines that may add to histamine load, especially in larger servings.

Lentils are often well-tolerated in small amounts, but they're not entirely neutral for histamine-sensitive people.

  • Amine content — lentils contain biogenic amines that contribute to your cumulative histamine load across a meal, which matters most when other moderate foods are also on the plate

  • Freshly cooked is better — cooking dried lentils from scratch produces lower amine levels than canned versions, which have been sitting in liquid through processing and storage

Freshly cooked lentils in moderate portions are generally among the more manageable legume options.
